Our  Millesimato Extra Dry is a sparkling wine of great softness and fragrance capable of enveloping the palate with its intense fruity notes.

TYPE OF WINE: Millesimato Sparkling Wine

PROVENANCE: Production superiors of the estate vineyards

TYPE OF SOIL: Soils of different nature and composition according to the location of the vineyards

ALTITUDE: about 150 m. slm

VINEYARDING SYSTEM: Traditional method (modified Cappuccina)

HARVEST: mid to late September, exclusively by hand and selected

WINE-MAKING : Traditional white vinification: soft pressing of the grapes with pneumatic press, flotation of the musts and fermentation at controlled temperature (17-18°C) in cement tanks. Aging and resting on the noble lees for four to five months until filtering.

PRESSING : Martinotti method in stainless steel autoclaves for 35-40 days
Cold tartaric stabilization (-3.5°C)
Microfiltration before bottling

Fresh and harmonious flavor, soft on the palate, remarkable persistence and intense fruity aftertaste notes

 

SERVING: Ideal to serve with bucket and ice at a temperature of 6-8°C

RECOMMENDED CHALICE: Riedel for sparkling wines

STORAGE: Store bottles upright in a cool place away from light, avoid prolonged stops in the refrigerator

GASTRONOMIC PAIRINGS: Excellent as an aperitif and a great accompaniment to light, delicate pasta dishes, shellfish and seafood.
