Our “Colfondo” represents the traditional wine of Valdobbiadene, produced according to a rustic winemaking method involving natural refermentation in the bottle. It is differentiated by the presence of a yeast deposit at the bottom of the bottle that gives creamy notes and evolved hints of bread crust. Due to its dryness and delicate fizz, it is much appreciated for its lightness and digestibility.

ALTITUDE: about 150 – 200 m. slm

FARMING SYSTEM: Traditional method (modified Cappuccina)

 

HARVEST: from mid to late September

WINE-MAKING: Traditional white vinification: soft pressing of grapes with pneumatic press, flotation of musts and fermentation at controlled temperature (17-18°C) in cement tanks. Aging and resting on the noble lees for four to five months until bottling.

Pale straw yellow color with greenish reflections

Bottle refermentation gives this wine a broad and enveloping bouquet with intense notes of yellow fruit (yellow apple and pear) and creamy hints reminiscent of yeast and bread crust.
Fresh and harmonious flavor, dry and mineral sensation on the palate, persistent, long and creamy aftertaste.

SERVING: Serve preferably decantered at a temperature of 8-10°C

STORAGE: Store bottles upright in a cool place away from light, avoid prolonged stops in the refrigerator
