Our Valdobbiadene DOCG “Sui Lieviti” is the result of the vinification and in-bottle frothing of a single vineyard in Saccol di Valdobbiadene, the Croset Vineyard, the most historic of our winery’s vineyards, planted in 1935. The presence of centuries-old vines and extreme slopes have allowed this vineyard to be registered in the register of heroic viticulture by CERVIM. This sparkling wine is distinguished by the presence of a deposit of fine lees at the bottom of the bottle, a guarantee of refermentation in the bottle, which can naturally preserve the wine over time in the absence of free sulfites. Bottle frothing also leads to the complete exhaustion of residual sugar (Brut Nature). Typology: Spumante “Sui Lieviti” Provenance: Vigna Croset (Saccol di Valdobbiadene) Grape variety: 90% Glera 2% Perera 8% Bianchetta trevigiana Soil type: The soil originated from the uplift of what was once an ocean floor, now formed by a first superficial fertile layer about 30 cm deep composed mainly of clay marls rich in limestone and a subsurface layer of mother rock (sometimes outcropping in places) of red sandstone rich in iron oxides. Altitude: 300 m. asl Training system: traditional method of Valdobbiadene (modified Cappuccina) Average age of vineyard: 90-100 years old Historic vineyard Yield: 100 q/ha Harvest: late September to early October, exclusively by hand and selected Vinification : Traditional white vinification: soft pressing of grapes with pneumatic press, flotation of musts and fermentation at controlled temperature (17-18°C) in concrete tanks. Aging and resting on the noble lees with periodic battonage until April/May. Foaming : Foaming in bottle at constant temperature (12-14°C) without disgorgement. Maturation on the lees in the bottle minimum of 6/8 months depending on the vintage.

Intense straw yellow color distinguished by a veiling due to the presence of yeast at the bottom of the bottle. Delicate and silky perlage, very persistent. Very complex and diversified aromatic profile from floral notes of dandelion and spring wildflowers to fruity notes reminiscent of medlar and peach to those given by the yeast and bottle maturation reminiscent of acacia honey and hay. On the palate it is harmonious, complete and smooth even in the total absence of residual sugars and on the resttaste very dry, savory and mineral. Definitely a very gastronomic wine.
