Our  Millesimato Brut is a dry and delicate sparkling wine that knows how to bring out the minerality and spring scent of wild flowers typical of the vineyards.

TYPE OF SOIL: Soils of different nature and composition according to the location of the vineyards

ALTITUDE: about 150 m. slm

FARMING SYSTEM: Traditional method (modified Cappuccina)

HARVEST: from mid to late September, exclusively by hand and selected

WINE-MAKING : Traditional white vinification: soft pressing of the grapes with pneumatic press, flotation of the musts and fermentation at controlled temperature (17-18°C) in cement tanks. Aging and resting on the noble lees for four to five months until filtering.

PRESSING : Martinotti method in stainless steel autoclaves for 35-40 days
Cold tartaric stabilization (-3.5°C)
Microfiltration before bottling

STORAGE: Store bottles upright in a cool place away from light, avoid prolonged stops in the refrigerator
